Quiche w/ a potato crust helps to cut the calories by losing the pastry crust

Recipe Ingredients for Potato Crusted Quiche

2 medium potato, grated
1 tsp canola oil
3 eggs
1 cup 2% milk
1 pinch nutmeg
1/2 tbls salt
1 tsp pepper
7 oz frozen spinach
1/2 medium onion, chopped
1/2 cup parmesan cheese, grated

Recipe Directions for Potato Crusted Quiche

  1. Preheat over to 400 degrees.

  2. Grate potatoe. Mix potatoe with 1 egg and salt and pepper to taste. Line 9 inch pie pan with potato mixture. Bake 30 minutes. Remove crust and allow to cool.

  3. Reset over to 350 degrees.

  4. Mix 2 eggs, nutmeg and milk.

  5. Place Spinach and onion evenly in pie crust.

  6. Pour Egg mixture into crust within 1/4 inch of top

  7. Bake quiche for 30 - 45 minutes until the edges of mixture is set, but the middle is giggly.

  8. Remove from oven and let cool for 30 minutes. Serve at room temperature. Can be wrapped in plastic, then foil for two months. Reheat at 350 degrees for 20 - 25 minutes.
