Recipe Ingredients for Potato crusted individual quiche

1/4 cup egg substitute
1/2 cup potato, shredded
1 tablespoon onion, diced
1 tablespoon bell pepper, diced
1 tablespoon mushroom, diced
1 ounce cheddar cheese

Recipe Directions for Potato crusted individual quiche

  1. Preheat oven to 350.

  2. Spray an individual pie tray with cooking spray.

  3. Press shredded potato in pie tray as crust.

  4. Add diced vegetables in potato and pour egg substitute over top.

  5. Place shredded cheese over top of quiche.

  6. Bake quiche for approximately 30 minutes or until puffed-up and top is lightly browned.
