Recipe Ingredients for Potato-crusted Fish

600 g white fish fillet
600 g potato
2 tbsp extra virgin olive oil
2/3 cup white sugar
1/2 cup white vinegar
6 cup salad leaves

Recipe Directions for Potato-crusted Fish

  1. steam or boil potatoes until par-cooked. when cool enough to handle, peel & grate. Lay fish on a tra & top each fillet with grated potato, pressing down to mould over fish. refigerate for 10mins.

  2. Make Red Onion dressing. combine sugar, vinegar & 1/2 cup of water in a small saucepan. heat on low until sugar dissoves. add diced onion, increase heat & boil for 10mins, or until syrupy. stain & discard onion.

  3. heat a flat BBQ plate on medium & add oil when hot. cook fish, potato-side down, for 3-5mins until crisp & golden. turn fish & cook with hood closed for 5 min or until cooked through.

  4. drizzle dressing over fish & serve with salad
