Recipe Ingredients for Potato Crust, Spinach Pesto, Turkey Pepperoni, Goat Mozzarella Pizza

17 slices Sliced Turkey Pepperoni
10 cloves Garlic
4 tablespoons Vegetable Oil, Sunflower, Oleic (70% And Over)
1 cup Pine Nuts, Pignolia, Dried
1 lb. Spinach
1 cup Basil, Fresh
4 Potatoes, White, Flesh And Skin
2 tbsp Olive Oil
1 tsp Oregano, Ground
1 tsp Pepper, Black
1 cup Mushrooms
1 cup Goat?s Milk Mozzarella Shredded
1 cup Onions, Spring Or Scallions

Recipe Directions for Potato Crust, Spinach Pesto, Turkey Pepperoni, Goat Mozzarella Pizza

  1. Take spinach, pine nuts, sunflower oil, garlic and basil and blend them to make a Pesto.

  2. In large pot of boiling salted water, cook potatoes for 10 minutes. Drain and let cool. Grate coarsely into large bowl. Add oil, oregano and pepper; toss to combine.

  3. Lightly grease 12-inch (30 cm) round pizza pan; firmly press potatoes evenly over pan. Bake in bottom of 450F (230C) oven for 25 minutes or until tender and golden at edges.

  4. Spread potato crust with sauce.

  5. Top with toppings. Bake for 5 to 10 minutes or until cheese is melted
