Breakfast Mini-Quiches using potato instead of biscuit crust.

Recipe Ingredients for Potato Crust Mini-Quiche

2 potatoes
6 eggs
1/2 lb ground beef
1/2 green bell pepper
2 mushrooms
1/2 c spinach
4 oz cheese

Recipe Directions for Potato Crust Mini-Quiche

  1. Brown ground beef with seasonings to taste

  2. Saute bell pepper and mushroom

  3. Grate raw potato and use to line greased muffin tin.

  4. Mix bell pepper, mushroom, spinach, and ground beef, and spoon into each cup.

  5. Grate cheese and mix with the eggs

  6. Spoon egg and cheese mixture over each cup

  7. Bake @ 350 for about 20-25 minutes until the egg appears cooked.
