Recipe Ingredients for Potato-Corn Triangles

2/3 cup instant mashed potato flakes
1/3 cup vegetable shortening
1 1/4 cup all-purpose flour
1/2 cup yellow cornmeal
4 tsp baking powder
1/2 tsp salt
1/2 cup skim milk

Recipe Directions for Potato-Corn Triangles

Combine instant potato flakes and 2/3 cup hot water; stir till water is absorbed. Blend in shortening. Stir together flour, cornmeal, baking powder, and salt; add to potato mixture. Stir in milk till dry ingredients are moistened. Knead gently on well-floured surface (3 or 4 strokes). Roll dough to 9-inch circle. Cut into 12 triangles. Place on ungreased baking sheet 2 inches apart. Bake at 400 degrees for 20 to 25 minutes. Makes 12 triangles.
