This is an easy recipe for a nice creamy potato chowder that is not too high in calories or fat!

Recipe Ingredients for Potato Corn Chowder

1/4 cup chopped celery
1/4 cup chopped onion
1 3/4 cup chicken broth
1/4 cup water
1/8 tsp black pepper
2 cups corn
1 cup instant mashed potato flakes
1 cup diced potatoes
1 1/2 cup non-fat milk
3/4 cup low-fat cheese
1 tbsp lemon juice

Recipe Directions for Potato Corn Chowder

  1. Coat large saucepan with cooking spray. Saute celery and onion on medium heat for 5 minutes or until crisp-tender.

  2. Add chicken broth, water, and black pepper. Bring to a boil.

  3. Remove from heat. Add corn, potato flakes, and potatoes, stirring until potato flakes are moistened.

  4. Stir in milk and cheese. Cook over medium heat 5 minuts or until cheese melts. Stir in lemon juice.
