Recipe Ingredients for Potato and Corn Chowder

3 cups corn, frozen
1 potato, large, cubed
1 stalk celery, chopped
1 small onion, chopped small
1 salt to taste
1 pepper to taste
1 tablespoon olive oil
4 cups vegetable broth

Recipe Directions for Potato and Corn Chowder

Heat the olive oil in pressure cooker and add onion and celery until soft. Add potato and vegetable broth. Cover, raise to pressure and cook for 6 minutes. Reduce pressure, open and add corn, salt and pepper. Cook for further 2 minutes. Reduce pressure again and remove two cups, blend and return to chowder. This gives it a nice creamy texture.
