This soup is reminiscent of Olive Garden's Zuppa Tuscana, made healthy using lowfat chicken sausage from Trader Joes, fat free chicken broth, and whole milk.

Recipe Ingredients for Potato w/ chicken sausage soup

1 tbls olive oil
1 tbls minced garlic
1/2 cup diced onion
3/4 cup diced celery
3/4 cup diced carrot
2 cups water
4 cups chicken stock, fat free
3 cups shredded potatoes
2 tsp black pepper
1 cup whole milk
4 sausage link, chicken

Recipe Directions for Potato w/ chicken sausage soup

  1. Finely dice onion, celery, and carrot

  2. Saute vegis and garlic in olive oil until onion is translucent

  3. Add water, chicken stock, and shredded potatoes to sauteed vegis

  4. Bring to a boil, cover and simmer

  5. Dice up the sausages (use 2 precooked, Trader Joes chicken jalepenos sausages, each are 100 calories - I tried to match with something comparable in the recipe details) and saute in a skillet until lightly browned

  6. Add the chicken sausage and room temperature milk to the broth mixture and continue to simmer until shredded potatoes have started to break down

  7. Before serving, add salt and pepper to taste, and use an immersion blender if a smoother texture is desired
