adapted from 'Indian Delights' recipe for aloo/piaz saag - increased quantities, decreased oil and added chicken and carrots. Low-cal, healthy and filling

Recipe Ingredients for potato-chicken curry

1 kg potatoes
550 g onions
1 tomato
30 g green chili
2 tbs oil
2 tsp cinnamon
2 tsp garlic
2 tsp ginger
300 g carrots
300 g chicken breast

Recipe Directions for potato-chicken curry

  1. 1. Cut veggies and chicken in equal-sized chunks.

  2. 2. Fry garlic and ginger. Add cinnamon and chilli.

  3. 3. Add rest of vegetables except tomato and braise for a bit.

  4. 4. Add enough water to cook vegetables (I filled the pot 2/3 of the way up the veggies with water - about 2 litres).

  5. 5. Place tomato on top and cover.

  6. 6. Halfway through cooking, add chunks of chicken.

  7. 7. Serve with salad and plain yoghurt.
