Recipe Ingredients for Potato Cheese Soup

3 medium potatoes, peeled and quarted
1 small onion, finely chopped
1 cup water
1 tsp salt
3 cups milk
3 tbls butter
2 tbls flour
2 tbls fresh parsley, minced
1/8 tsp pepper
1 cup swiss cheese, shredded, 4 ounces

Recipe Directions for Potato Cheese Soup

  1. In large saucepan, bring potatoes, onion, water and salt to boil. Reduce heat, cover and simmer for 20 minutes or until potatoes are tender. Do not drain. mash slightly, stir in milk

  2. Meanwhile, in small bowl, blend the butter, flour, parsleyand pepper. Stir into potatoe mixture. Cook and stir over medium heat until thickened and bubbly. Remove from heat, add cheese and stir untill almost melted
