Very creamy, but lower in calories than the Moosewood recipe that this adapts.

Recipe Ingredients for Potato-Cheese Soup

1 tbsp unsalted butter
2 cups onions, chopped
1 garlic clove, minced
2 russet potatoes, chopped
1 carrot, chopped
4 cups water or vegetable stock
1 tbsp corn starch
1 1/2 cups skim milk
4 ounces of light cream cheese
1 cup cheddar cheese, grated

Recipe Directions for Potato-Cheese Soup

Saute onions and garlic in butter in large non-stick soup pot. Add potatoes, carrot, and veggie stock. Simmer for 20 minutes. Puree in blender with milk and cream cheese then return to soup pot and replace over heat. Mix corn starch with equal parts stock and add starch paste to mixture. Simmer 10 minutes. Add cheddar, stir until melted.
