This is a great dinnier. If you like eggs and vegetables then this is the recipe for you. Makes great leftovers soo!

Recipe Ingredients for Potato and Cheese Frittata

5 eggs
1 potato
1/2 cup tomato
1/2 cup green pepper
1/2 cup spinach
1/2 cup of mozerella or cheddar cheese
1 onion
1 salt, pepper and garlic salt to taste

Recipe Directions for Potato and Cheese Frittata

  1. Pre-heat oven to 400 degrees

  2. Cut up your potato in long strips or grad it with a cheese grader. Brown potatos in oil over medium heat. Add your onion - chopped. Sautee till tender.

  3. In mixing bowl wip egges until smooth. Add tomato, green pepper and spinach. Pour mixture into skill containing potatos and onions.

  4. Put in oven for 10 minutes or unil the egges start to set. Remove from oven and sprinkle cheese ontop. Return for another 5 or 10 minutes till done.
