These great little potato burgers can be made for dinner and packed for lunch the next day

Recipe Ingredients for Potato and Cheese Burgers

1 1/2 potatoes
1 3/4 cups cheese
1 red onion
1 tablespoons butter
1 salt and pepper

Recipe Directions for Potato and Cheese Burgers

  1. The evening before put the potatoes in a large pan of water and bring to a boil. Boil for about 20 minutes until the potatoes are just cooked but firm. Drain and cool.

  2. Peel the potatoes and grate them into a bowl. Stir in the grated cheese, chopped onion, and seasoning. With wet hands shape into 6 rounds then press down with 2 fingers to form into burgers. Neaten up the edges.

  3. Set a skillet pan over meduim heat and melt half the butter. Cook the burgers in 2 batches, using the remaining butterm until golden brown, which will take about 5 minutes, turning once. Set aside to cool.

  4. Enjoy the 4 burgers for dinner, served with lightly smoked troutt filets and cucumber slices, and pack the remaining brugers into annairtight container, Keep in the refrigerator for up to 3 days.
