Recipe Ingredients for Potato and Cheddar Soup

2 cups water
2 cups diced potatoes (peeled)
3 tablespoons melted butter
1 small onion, chopped
3 tablespoons all-purpose flour
3 cups milk
1/2 teaspoon white sugar
1 cup shredded Chedder cheese
1 cup diced ham
1 Salt and pepper to taste

Recipe Directions for Potato and Cheddar Soup

  1. Using a medium sized stock pot bring water to a boil.

  2. Add potatoes and cook until tender.

  3. Drain reserving 1 cup liquid (or whatever the amount is that is left over).

  4. Stir the butter and the flour in the now empty pot, and cook until the onions are browned a bit, then add the flour.

  5. Season with salt and pepper.

  6. Gradually stir in the potatoes, reserved liquid (from the potatoes), milk, sugar, cheese, and ham.

  7. Simmer for 30 minutes stirring frequently, and beware of how thick you want it because the longer you stir it and let it simmer the thicker it will be.

  8. Enjoy!
