Recipe Ingredients for Potato and Celery Root Gratin casserole, 8 (1/2 c.) servings

1 1/4 c. heavy cream
1/4 c. milk
1 small onion, halved
10 g garlic, smashed
1 tbsp. butter, for greasing baking dish
1 lb. celery root
1 lb. Yukon gold potatoes, sliced
1 tsp. salt
1/2 tsp. freshly ground black pepper
3 oz. cheddar cheese

Recipe Directions for Potato and Celery Root Gratin casserole, 8 (1/2 c.) servings

  1. Preheat oven to 400*

  2. Cut up onion into big chunks. Smash garlic with wooden spatula. In a medium saucepan, over Med/Hi heat, bring heavy cream, milk, onion and garlic to a boil. Remove from heat and let steep for about 20-30 min.

  3. Meanwhile, butter baking dish (9" square) and foil large enough to seal over dish.

  4. Using a sharp knife, peel, halve and thinly slice celery root; cut slices in half. Thinly slice potatoes.

  5. In prepared dish, arrange a layer of celery root slices, followed by a layer of potato slices; season with salt and pepper. Repeat.

  6. Strain onion and garlic from cream and discard. Pour cream over casserole. Cover dish with foil. Bake for 40 min.

  7. Remove foil and sprinkle cheese on top. Return to oven and bake until bubbly, about 15 min.

  8. Allow to rest 15 min before serving.
