A cross between hash-browned and scalloped potatoes

Recipe Ingredients for Potato Casserole - Sunset Breakfast & Brunch

3 medium russet potatoes
1 1/2 cup 2% milk
3 tbs butter
2 eggs
1/8 tsp pepper
1 large onion
1 tsp Paprika

Recipe Directions for Potato Casserole - Sunset Breakfast & Brunch

  1. Peel & shred potatoes, you should have 4 cups. Immediately transfer potatoes to a bowl and cover with cold water to prevent discoloration; set aside.

  2. Remove 1/4 cup water from potatoes & place in small pan with milk & 2 tbs of butter, cook over medium heat to just under boiling; remove from heat & set aside.

  3. Beat eggs with salt and pepper. Continue beating & slowly pour the hot milk mixture over eggs; blend well.

  4. Drain potatoes well by pouring into a colander and pressing out the liquid. Combine potatoes, onion, and egg mixture. Rub the remaining 1 tbs butter over sides & bottom of a 9 x 13 inch baking pan. Spoon potato mixture into pan & sprinkle with paprika. Bake, uncovered, in 375 oven until set in center & edges are browned & crusty (about 50 minutes). Cut in squares to serve. Makes 6 servings.
