This works great with leftover mashed potatoes. When useing leftover mashed potatoes you DO NOT use added butter or milk.

Recipe Ingredients for potato casserole

2 cups potatoes
1/8 cup butter
1 cup milk
1 cup sour cream
2 eggs
1/4 cup parmesan cheese
3 tblsp flour

Recipe Directions for potato casserole

Mix everything together and bake at 350 for 30 minutes or until golden brown.
