I am going to make this for my moms mothers day brunch it's 6 360 calories for one serving if divided into 6.

Recipe Ingredients for potato casserole brunch

32 oz Potatoes, Boiled
4 oz Muenster Cheese
2 oz Mini Babybel Original
2 oz Mild Cheddar
1 cup onion
1 cup Mayo Mayonnaise with Olive Oil

Recipe Directions for potato casserole brunch

  1. Go ahead & preheat your oven to 350 F, or 175 C.

  2. In a large saucepan- bring potatoes to boil. Cook just until potatoes are soft. Drain & place in a large bowl.

  3. In same bowl- gently stir in cheese until melted without mashing potatoes.

  4. In a separate bowl- stir together mayo, onion & bacon. Gently stir into potatoes and cheese. Spread into a 139-inch baking dish & bake for 50 minutes.
