This is my Mother-in-law's recipe. It is a staple at any family get together.

Recipe Ingredients for Potato Casseole

2 sticks butter, melted and divided in half
32 oz frozen cubed potatoes'
16 oz light sour cream
1 can cream of chicken and mushroom soup
12 oz shredded cheddar cheese
1 chopped onion
4 cups cornflakes, lightly crushed

Recipe Directions for Potato Casseole

  1. Place thawed potatoes in a 13x9 baking dish.

  2. Mix together sour cream, canned soup, 1 stick melted butter, chopped onion and shredded cheese.

  3. Salt and pepper to taste.

  4. Spread mixture onto potatoes and lightly work the mixture into the potatoes but don't mix completely.

  5. Crush corn flakes and sprinkle on top of the casserole.

  6. Drizzle 1 stick of melted butter over the top.

  7. Bake at 350 for 45 minutes, uncovered.
