Recipe Ingredients for Potato-Carrot-Onion Medley

35 oz. red potatoes
1 large red onion
5 oz. carrots
1/4 c. olive oil
1 salt
1 pepper

Recipe Directions for Potato-Carrot-Onion Medley

  1. Cut up red potatoes into fourths

  2. Cut up onion into large chunks

  3. Use bag of small carrots or cut up large carrots into chunks

  4. Mix together on baking sheet (line with foil and spray with Pam)

  5. Pour olive oil and sprinke with salt and fresh black pepper.

  6. Mix together with clean hands.

  7. Roast in pre-heated 425 degree oven for about an hour.
