Simple root vegetable soup to ward off the cold

Recipe Ingredients for Potato, Carrot, Onion, Garlic Soup

4 medium russet potatoes
32 oz low sodium chicken broth
1/2 yellow onion
1 cup carrots, chopped
2 tbsp butter
2 tbsp minced garlic

Recipe Directions for Potato, Carrot, Onion, Garlic Soup

  1. Sweat for 5 minutes butter, onion, and garlic together on medium heat.

  2. Chop up carrots and potatos.

  3. Add to pan.

  4. Cover with 32 oz. of low sodium chicken broth.

  5. Bring to boil and then simmer on low for an additional 30 minutes or until vegetables are soft.

  6. Use an immersion blender to puree.
