Recipe Ingredients for Potato Calulflower Cumin Soup

1/4 cup olive oil
2 cup sweet onion, chopped
18 1/2 oz cauliflower, chopped
200 gram potato, cubed
80 gram carrot, chopped
5 cup water
1 tsp nutmeg
1/2 tbsp salt
1 tbsp black pepper
1 tbsp coriander
2 tbsp parsley
2 tbsp ginger
2 tbsp chili powder
3 tbsp cumin
1 cup parmesan, grated
1 cup milk, 1%

Recipe Directions for Potato Calulflower Cumin Soup

In heavy pot saute onion in olive oil till onion is clear. Add potato and saute for three additiional minutes. Add cauliflower, carrots, nutmeg, salt, pepper, coriander, parsley, ginger, chili powder and cumin, and stir well. Add water. Bring to a boil. Lower heat to a soft boil and continue to cook for 30 minutes or until vegetables are tender. Remove from heat. Add the parmesan and milk and stir. Blend in batches in a blender or food processor. This soup can be frozen. To reheat just defrost and warm up in the microwave.
