Bland but filling. Good topper for creamed or braised meats/vegetables as a mini shepherd's pie.

Recipe Ingredients for Potato cakes

4 medium potatoes
3 eggs
3/4 cup flour
1 tablespoon olive oil

Recipe Directions for Potato cakes

  1. Peel and cut up potatoes into eighths. Cook in boiling water until just tender.

  2. Drain and let steam (covered) until dry and mealy.

  3. Rice potatoes and stir in eggs and flour - add salt to taste.

  4. Drop, using a large spoon or small ladle, onto hot skillet with a small amount of oil - cook until crust forms and then turn. Cook until crust forms on second side.
