This soup is very tasty and wonderfully filling. I'll make a huge pot of it and eat it over the course of a few days.

Recipe Ingredients for Potato and cabbage soup

5 medium potatoes, peeled and diced
6 1/4 cups water
4 cloves of garlic, sliced
3 tbsp olive oil
1/4 lb cabbage
1 salt and pepper to taste

Recipe Directions for Potato and cabbage soup

  1. Peel and cut up potatoes, and boil in salted water, with garlic.

  2. When soft, mash and add olive oil and cabbage or kale.

  3. Boil uncovered for about 3 minutes.

  4. Season to taste.

  5. Hit it with a stick blender until it reaches the desired consistency
