A super fast way to have potato latkes, but with rice in 'em.

Recipe Ingredients for Potato and Brown Rice fritters

4 serving mashed potatoes, garlic and butter (Trader Joe's)
2 large Egg, White
160 grams Rice, Brown, Medium-grain, Cooked
0.5 medium (2-1/2" dia) Onions
1 tsp California Style Minced Garlic made from Fresh Garlic
0.5 cup, pieces or slices Mushrooms

Recipe Directions for Potato and Brown Rice fritters

Mix all the ingredients and add enough water for potato flakes to puff up, and be mashable. Then lightly spray a pan, form into 6 to 8 patties, and cook on medium-low heat for about 6 minutes each side.
