Recipe Ingredients for Potato-Broccoli Soup

3 cups potatoes, cubed, peeled
1 cup frozen broccoli, chopped
1/2 cup carrots, chopped
1/2 cup water
1/4 tsp salt
14 1/4 oz no-salt-added chicken broth
1 1/2 cups 1% low-fat milk
3 tablespoons all-purpose flour
6 oz light processed cheese, cubed

Recipe Directions for Potato-Broccoli Soup

  1. Combine first 6 ingredients and a large Dutch oven. bring to a boil, cover reduce heat and simmer 20 minutes

  2. Combine milk and flour, stirring until smooth. Add milk mixture and cheese to the vegetable mixure in Dutch oven. Cook over medium heat, stirring constantly, until cheese melts and mixture thickens.

  3. Serve immediately, or cool; divide servings into indifidual airtight containers and regrigerate up to 3 days. Reheat in microwave.
