Makes 16 servings



Serving size is 1 cup. Calories can be reduced with fat free ingredients but our family didn't like the taste. We also found it best done in a 5 quart slow cooker. This makes a great winter night meal complimented with a small salad.

Recipe Ingredients for Potato Broccoli Cheddar Soup

3 lbs potatoes
6 cups broccoli florets
4 cans cream of mushroom soup
2 cups green onions
1/4 t garlic powder
1/8 t red pepper
2 cups shredded sharp cheddar cheese
1 1/2 cups low fat sour cream
1 1/2 cups 1% milk
1 dash black pepper

Recipe Directions for Potato Broccoli Cheddar Soup

  1. Peel and cut potatoes in to bite size piece.

  2. Finely chop the green onions

  3. Combine potatoes, soup (2 large cans can be used instead), green onions, garlic powder, and red pepper.

  4. Cover and cook on low 8 hours.

  5. Stir in the cheese, sour cream, and milk until cheese is melted.

  6. Cover and cook on high for 10 minutes.

  7. Season with additional green onions and black pepper to taste.
