A good accompaniment to roast meat. Can be varied by adding herbs.

Recipe Ingredients for Potato boulangère

16 g (unsalted) butter
58 g onion
425 g potato
250 ml chicken stock

Recipe Directions for Potato boulangère

  1. Preheat oven to 180 degrees celsius. Slice the onions and potatoes finely maybe using a mandolin. Heat the chicken stock and season to taste. Heat butter in the frying pan leaving some to butter a shallow ovenproof dish. Fry the onions in the butter until golden. Place the onions in the bottom of the buttered dish and layer the potatoes on top. Add the chicken stock until it reaches just under the top layer.

  2. Place into the oven and cook until the potatoes are soft and the top is browned and slightly crunchy. If the top layer gets too dark cover with alufoil or cover the potatoes at the start and remove the cover after approx 20 minutes
