Healthy - easy to prepare - great vegetarian dish Can be used as main course Serve with low fat skim milk cheese and a thick slice of fresh French or Italian bread 30 minutes to prepare (10 chopping, 20 cooking)

Recipe Ingredients for Potato Bean Soup

3 tbsp oil
1 onion, minced
3 large potatos, cubed
1080 ml beans, red kidney
8 cups water
1 tsp salt
1/4 tsp pepper

Recipe Directions for Potato Bean Soup

  1. In large Dutch oven, saute onion in oil until transparent

  2. Add potatoes and stir occassionally until the potatoes begin to stick to pan bottom

  3. Add entire contents of undrained cans of beans to mixture (especially sediment at the bottom)

  4. Add water (to speed up process- add boiling water)

  5. Loosen potatoes from bottom of pan

  6. Add salt and pepper (adjust to taste)

  7. Bring to a boil

  8. Simmer until potato chunks are tender (about 20 min.), stirring occasionally.
