As found in Bean Cookery by Sue & Bill Deeming Sodium would be somewhat less since I rinsed the beans before using.

Recipe Ingredients for Potato & Bean Scallop

30 oz kidney beans
24 oz ground beef
135 g onion
1 tsp salt
1/4 cup shedds spread
1/4 cup flour
5 cups 2% milk, warmed
1241 g potatoes

Recipe Directions for Potato & Bean Scallop

  1. Drain beans - set aside

  2. Brown beef, add onion - drain - set aside

  3. In a medium saucepan melt shedd's spread.

  4. Stir in flour & salt until smooth

  5. Gradually add warm milk, stirring until smooth.

  6. Stir constantly over medium heat until mixture thickens and comes to a boil

  7. In a 2qt casserole layer 1/3 of potato slices, 1/2 of beef mixture, and 1/2 of beans.

  8. Pour 1/3 of sauce over layers.

  9. Repeat layers ending with potato slices.

  10. Top with remaining sauce.

  11. Bake uncovered in 350 deg. oven until potato slices are tender and crusty brown on top. (Approx 1 hr)
