Potato and Bean Casserole Recipe

very tasty with braised cabbage or brussels or green salad

Recipe Ingredients for potato and bean casserole

1 tablespoon olive oil
213 grams canned kidney beans, drained and rinsed
8 oz potatoes, thinly sliced
1 salt and pepper, season to taste
2 oz cheese, grated
1 medium egg
1/2 pint skimmed milk
1/2 oz margarine
1 tablespoon sesame seeds
1 tablespoon sunflower seeds
1 tablespoon soy sauce

Recipe Directions for potato and bean casserole

  1. with the oil grease an oven proof dish.

  2. arrange half the potatoes in the dish, season well and cover with half the cheese, then top with the beans, then layer the rest of the potatoes in dish.

  3. beat the egg into the warmed milk then pour over the beans and potatoes.

  4. Top with the remaining cheese.

  5. Bake in a preheated oven for about 1 hour at gas mark 4.

  6. Whilst thats cooking in a frying pan melt the butter and toast the seeds till golden brown, then add the soy sauce, add this to the top of the casserole about 15 minutes before its finished cooking.

  7. Serve with your chosen veg or salad
