Recipe Ingredients for potato bake with tomatoes and oregano

1/3 cup olive oil
1 large onion
1 1/2 lb potatoes
12 oz cherry tomatoes
1/2 tsp oregano
1/2 cup bread crumbs

Recipe Directions for potato bake with tomatoes and oregano

  1. Oven - 400.

  2. Heat 2T oil. Add onion and saute until softened - 4-5 min. Add potatoes and saute 5 min. Season with SP.

  3. Transfer to dish. Arrange tomatoes in a layer on top of potatoes. Sprinkle with oregano and bread crumbs. Drizzle with remaining oil.

  4. Bake until tender - 35-40 min.
