Recipe Ingredients for Potato Bacon Soup

86 g Thick Sliced Bacon
8 oz Onions
64 oz Potatoes, Red, Flesh And Skin
4 serving Food You Feel Good About Culinary Stock
1 cup Organic Reduced Fat Milk 2% Milkfat

Recipe Directions for Potato Bacon Soup

  1. Cook bacon until crisp.

  2. Dice onion and saute in bacon drippings until translucent.

  3. Add garlic -- up to 4 cloves, or 4 tsps of garlic powder and saute a bit longer.

  4. Dice potatoes into 1" cubes and add to onion mixture, stir around to cover potatoes with onion mixture and put lid on.

  5. When the potatoes are sizzling nicely add enough chicken stock to cover them. This is a good time to add any optional extras like garlic scapes or chives or scallions. Allow to simmer for at least 15 minutes or until potatoes are tender enough to pierce easily with a fork or skewer.

  6. Take out about half of the potatoes and set aside.

  7. Puree the remaining potato-stock mixture with an immersion blender or anything else that will convert it all to a mushy mixture.

  8. Use a potato masher to gently smoosh the removed potatoes -- they should still be recognizably chunky -- and return to soup pot.

  9. Add enough milk to make the mixture thin enough to need a spoon but not watery.

  10. Enjoy.

  11. Note: if you want to make this a gourmet-style soup, replace the milk with heavy cream and butter.
