The best potato soup I've ever eaten!

Recipe Ingredients for Potato Bacon Chowder

2 cups potatoes, peeled & cubed
1 cup water
8 strips bacon, fried crisp
1/2 cup onion, chopped fine
1/2 cup celery, chopped fine
1 can cream of chicken soup, 10.75 oz, undiluted
1 3/4 cup skim milk
1 cup light sour cream
1/2 tsp. salt
1 dash of pepper

Recipe Directions for Potato Bacon Chowder

  1. In a large sauce pan, put potatoes and water and cook covered until tender.

  2. Cook bacon until crispy, and set aside to cool.

  3. Saute onions and celery in a pan lightly coated with cooking spray. Cook until tender.

  4. Add cream of chicken soup, celery & onions, sour cream, salt, pepper & crumbled bacon pieces to the UNDRAINED potatoes. Heat on medium for 10 minutes.

  5. Garnish with minced parsley if desired.
