A light lunch when you are Eating Clean

Recipe Ingredients for Potato & Asparagus Salad

2 1/2 oz. mushrooms
1/2 tbsp oil
1/2 tsp paprika
2 1/2 oz. asparagus
5 1/2 oz potatoes, without skin, boiled, with salt
1 oz. cherry tomato
1/2 onion, red
2 oz. lettuce, romaine

Dressing:
1/2 tbsp olive oil
1 tbsp lemon juice
1/2 tbsp soy sauce
1 tbsp basil, fresh
1 dash salt
1 dash pepper

Recipe Directions for Potato & Asparagus Salad

  1. Peel the potatoes and cut them into small cubes. Add to a pot with water and a tsp salt and cook until tender

  2. (Or use some cold potatoes lefter over from the day before)

  3. Slice mushrooms and saute in oil until mushrooms start to color. Season with some herbal salt and parika. Add to a medium sized bowl!

  4. Cut the asparagus into bite size pieces. Bring a smal pot of water to a boil. Add the asparagus and cook for 2 mins. Drain water and set aside!

  5. Slice onion and tomato and. Rinse the lettuce and rip into small bite size pieces.

  6. Add the asparagus, potatoes, onion, tomato and lettuce to the sauted mushroms.

  7. Stir together all ingredients for the dressing and pour over the vegetables. Mix well and serve!
