Recipe Ingredients for Potage Saint-Germain

500 g peas
30 g butter
1 onion
2 cup,+shredded Romaine
3 cups chicken stock
1/2 cup cream

Recipe Directions for Potage Saint-Germain

  1. Melt butter in saucepan, add peas and the onion (quartered), cover and cook very gently for 5 minutes. Add lettuce and stock and simmer gently until tender. Remove onion.

  2. Puree peas and return to the pan. Correct seasoning. Let simmer for 10 minutes before serving and just before, add the cream.

  3. If the soup requires thinning, do so with scalded milk.
