Recipe Ingredients for Potage Maigre

2 medium onion
2 T canola oil
1 stalk celery
5 c vegetable broth
1 c cucumber
1 c peas
3 c lettuce
2 T dill
2 T parsley

Recipe Directions for Potage Maigre

  1. saute onions till transulcent

  2. add celcery saute till bright

  3. add broth

  4. when warm, add cucumber and peas

  5. when het regained, add lettuce

  6. shortly before serving, add fresh parsley and dill

  7. serve alone or with sour cream or yogurt
