Recipe Ingredients for Pot Roast

2 tablespoons olive oil
1/2 teaspoon kosher salt
3 pound beef, chuck roast
2 onions
6 carrots
1/4 teaspoon pepper
2 1/2 cups beef stock
3 teaspoons rosemary
2 teaspoons thyme

Recipe Directions for Pot Roast

Preheat the oven to 275. Heat the oil in a Dutch oven and salt the meat. Cut the onions in half from root to tip. Cut off top and bottom and peel. Put the onions in the pot and brown a minute per side. Remove onions. Cut the carrots diagonally in 2 inch pieces and cook in the hot oil, just enough to brown, about 1 minute. Remove carrots, and set aside. Add a little more oil to the pan and reheat. Sear the meat one minute on each side. Deglaze the pan with a cup of the broth. The add meat and vegetables back into the pot. Pour the rest of the stock in and add the herbs. Cook 3-3 hours. Cut diagonally and serve with boiled or mashed potatoes and pan juices.
