Pot Roast Recipe

This is a basic pot roast. I substitute 32 oz of the vegetbale stock with lower sodium beef broth but the recipe analyzer wouldn't recognize the beef broth for some reason. The calories for each are the same. ~MW.

Recipe Ingredients for Pot Roast

64 oz vegetable stock
2 lb bottom round beef roast
12 oz yukon gold potatoes
4 oz baby carrots
4 oz celery
2 tbs olive oil
2 cloves garlic
1 tbs kosher salt
1 tsp fresh ground pepper

Recipe Directions for Pot Roast

  1. In a large skillet, heat olive oil on medium to medium high heat.

  2. Season the roast with salt and pepper and sear all sides until golden.

  3. Meanwhile, coarsely chop the veggies and dump into crockpot.

  4. Add Stock and broth and turn to low.

  5. Add the seared roast to the broth and cover.

  6. Cook for 8 hours.
