Pot Roast for 2 with 1 extra serving for leftovers

Recipe Ingredients for Pot Roast

9/10 lb chuck roast
1 tbs Extra Virgin Olive Oil
2 tbs whole wheat flour
2 tbs Salt-Free 17 Seasoning
1/2 cup chopped onion
2 cloves garlic
2 1/2 medium potatoes
2 stalks celery
5 medium carrots
1 can low sodium beef broth

Recipe Directions for Pot Roast

  1. coat meat with flour and half of seasoning, brown in olive oil in skillet

  2. remove meat from skillet and set aside

  3. brown (cut up) veggies with the rest of the seasoning in skillet, use a little bit of broth if needed to keep them from sticking

  4. remove veggies from skillet and set aside, return meat to skillet and add rest of broth

  5. cover and cook on medium for about 1/2 hour until meat starts falling apart

  6. add veggies back to pan

  7. cook for about 20 minutes or until done
