Vegan Sausage, Kale and Cauliflower Potpie

Recipe Ingredients for Pot Pie (Vegan)

2 tbs olive oil
4 Original Field Roast Grain Meat Sausages (sausage)
2 medium sweet onions, chopped
1 tbs chopped fresh rosemary
1 tsp kosher salt
1 tsp black pepper
0.33 cup flour
3 cup vegetable broth
1 cup,+chopped kale
1 tbs vinegar
1 tbs Dry Cooking Sherry
2 pounds cauliflower
1 roll+1+oz crescent rolls

Recipe Directions for Pot Pie (Vegan)

  1. Heat oven to 400 F. Heat the oil in a large skillet over medium-high heat. Add the sausage and cook, tossing occasionally, until browned, 4 to 6 minutes. Remove the sausage from the pan and put in a large bowl.

  2. Add the chopped onions, rosemary, teaspoon salt, and teaspoon pepper to the skillet and cook, stirring, until softened, 3 to 5 minutes. Add the flour and cook, stir for 1 min. Add the veggie broth and cook at a simmer for another 3 minutes. Add the kale, vinegar, sherry, teaspoon salt, and teaspoon pepper and cook, tossing, until the kale is wilted.

  3. Remove pan from heat and add mixture and cauliflower in the large bowl with sausage. Toss everything together to combine.

  4. Pour everything from bowl into a 913 pan or 3 Qt. baking dish. Top with desired pastry dough. You can overlap the rectangles or triangles slightly.

  5. Bake until the pastry is golden and the filling is bubbling, 25 to 30 minutes. Let cool for 5 minutes before serving.
