Makes 4 servings



A basic pot pie, just add chicken or lentils.

Recipe Ingredients for Pot Pie

1/2 c peas
1/2 c corn
2 carrots
3 potatoes
1/2 c celery
2 tablespoons olive oil
1 cup flour
1/3 c 1% milk
2/3 c 2% milk
1 1/2 tsp baking powder
1 egg
2 tablespoon margarine
1 can cream of chicken soup

Recipe Directions for Pot Pie

  1. Saute veggies in olive oil til soft. Boil potatoes, then dice. Mix in 1/3 milk and cream of chicken soup. Put in 8x8 pan. Mix last 4 ingredients, pour on top. Bake at 425 for 25-30 minutes.

  2. Note: if using chicken, use 1 cup. If lentils, 1/2 cup. Can use different 'cream of' soup.
