Moosewood Homespun Pot Pie from New Classics cookbook. Specified as serving 6 but provided more that 10 servings.

Recipe Ingredients for Pot Pie

1 tablespoon vegetable oil
2 cups onions, coarsely chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon dried marjoram
4 cups mushrooms, sliced
1 tablespoon Dijon mustard
2 cups sweet potatoes, chopped
2 cups potatoes, chopped
2 cups parsnips, chopped
1/2 teaspoon ground black pepper
3 cups water
3 tablespoon cornstarch, dissolved in 1/2 cup cold water
1 cup peas
1 cup corn
1 tablespoon soy sauce
1/2 teaspoon salt
2 cups flour, unbleached white
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
6 tablespoon butter, melted
1 cup buttermilk or plain yogurt
1 teaspoon dill

Recipe Directions for Pot Pie

  1. Preheat oven to 400. Lightly oil a 9x13 casserole dish.

  2. Saute onions and garlic in warmed oil, cover and cook on medium heat for 10-15 min, until vegetables are tender. Add salt, thyme, marjoram, mushrooms, and mustard. Cook until mushrooms start to release their juices, about 5 min.

  3. Add both potatoes, parsnips, black pepper, and water and bring to a boil. Reduce heat, cover, and simmer for 15-20 min, until vegetables are tender. Stir the cornstarch mixtures into the vegetables, stirring constantly until thickened. Mix in peas, corn, soy sauce, and salt. Pour into casserole dish and set aside.

  4. Sift together the flour, salt, baking powder, and baking soda. In a separate bowl, mix the butter and buttermilk or yogurt. Combine the wet and dry ingredients with as few strokes as possible. Drop batter over vegetables. Sprinkle with dill.

  5. Bake 25-30 minutes or until a knife inserted into the center of a biscuit comes out clean.
