This is a basic recipe. I like it a bit spicer and add chili powder.

Recipe Ingredients for Posole Stew (Slow Cooker)

1 1/2 lbs country-style pork ribs, boneless
1 medium onion, chopped
29 ounces white hominy, drained (Posole)
14 1/2 ounces tomatoes (diced)
4 ounces chopped green chili peppers
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon cumin

Recipe Directions for Posole Stew (Slow Cooker)

  1. Cube ribs and brown pork in lightly oiled skillet.

  2. Add onion and saute until limp. Drain fat.

  3. Combine pork, onion and remaining ingredients in crockpot.

  4. Cook on low heat for 5 hours to 6 hours.
