A delightful low calorie substitue to beef stew with a Mexicana flavor and texture to take your palette on a journey south of the boarder!

Recipe Ingredients for Posole Stew

1.27 lbs beef chuck
28 oz can diced tomatoes
1 lb hominy
9 medium carrots
6 medium potatoes
2 tbs olive oil
2 tbs sea salt
1 tbsp diced garlic
1/4 cup diced onion
84 oz water (three cans)

Recipe Directions for Posole Stew

  1. 1. Brown meat, onions & garlic in olive oil.

  2. 2. Add all other ingredients

  3. 3. Add water via empty tomato can X 3 & Cook on simmer for 1.5 hours or until posole (hominy) is tender.

  4. Ole! Enjoy!
