Soup Topping: 2 cups shredded lettuce 1 onion 4 tomatoes 8 tbsp lime juice

Recipe Ingredients for Posole

2 lbs pork tenderloin, cubed into bite size pieces
58 oz hominy
60 oz water
2 cloves garlic
2 peppers

Recipe Directions for Posole

  1. Boil water and add pork, garlic cloves, water and peppers in a large pot. Simmer 25-30 min.

  2. Take out peppers and garlic. Blend with a little bit of water. Return to pot.

  3. Simmer an additional 25-30 min.

  4. Ladel soup into bowls and top with shredded lettuce, sliced tomatoes, lime juice and onion.
