Delightful Mexican soup. The nutritional analysis includes the traditional accompaniments of cabbage, limes, radishes, and avocadoes.

Recipe Ingredients for Posole

2 t. olive oil
1 medium onion
2 medium tomatoes
6 chili peppers, guajillos, seeded, deveined, and lightly toasted
4 cloves garlic
1/2 t. salt
1/2 t cumin seeds, toasted
1 lb pork tenderloin, cut into 1" chunks and boiled for a few minutes
2 quarts water
1 T dried oregano
3 cups hominy, drained and rinsed
8 oz cabbage, thinly sliced
1/2 avocado, finely diced
8 radishes, sliced thinly

Recipe Directions for Posole

  1. Heat the oil in a pan over medium heat.

  2. Place the onion, tomatoes, toasted chiles, garlic, and cumin in a blender, with a little additional water if needed. Blend until smooth.

  3. Pour the blended mixture into the oil, and stir for a few minutes until it is thickened.

  4. Add the pork, oregano, water, and hominy and cook for about an hour, until the pork is very tender.

  5. Serve the soup with the cabbage, avocado, radishes, lime wedges, and jalapenos if desired.
