Portuguese Sausage, Kale and Potato Soup

Recipe Ingredients for Portuguese Sausage, Kale and Potato Soup

1 tbsp extra-virgin olive oil
1/2 lb kielbasa
1 onion
2 garlic cloves
1 lb potatoes
1 c chicken stock
2 cups water
1 salt and pepper
1 cup kale
1 tbsp Parmesan cheese

Recipe Directions for Portuguese Sausage, Kale and Potato Soup

  1. In a medium-large heavy pot set over medium-high heat, add a generous drizzle of oil and let it sit until it shimmers

  2. brown the sausage, stirring often for 2 to 3 minutes.

  3. Add the onion and garlic and cook for 7 to 8 minutes.

  4. Add the potatoes, stock, water, salt and pepper and simmer, until the potatoes are very tender, 15 to 20 minutes.

  5. Mash some potatoes into soup to thicken, then add the kale and simmer for 5 minutes, until the kale is wilted and tender.

  6. Serve immediately, with Parmesan cheese grated on top if you like.
