A vegan version of Portuguese Kale Soup - [Nonvegetarians can make with Chorizo] This is a VERY hearty soup that makes a great main dish.

Recipe Ingredients for Portuguese Kale Soup

1 cup Beans, White, Mature Seeds, Canned
2 medium (2-1/2" dia) Onions
10 cup (8 fl oz) Water
16 oz Kale
2 potato medium (2-1/4" to 3-1/4" dia) Potatoes, White, Flesh And Skin
6 oz Tomato Paste
1 tsp Vinegar, Cider
4 cloves, raw Garlic
1 tbsp Olive Oil

Recipe Directions for Portuguese Kale Soup

  1. Throw all incredients into a LARGE pot raw. (You need a really good size pot because the kale takes up a ton of space until it wilts...)

  2. Cook on low-medium heat for 2 hours. Stir from time to time to prevent burning.
